This Valentine's Day, we're presenting a romantic dinner pairing everyone's two favorite things: Wine and Chocolate! This year we will be joined by renowned chocolatier Tracey Racen (bio below). Each glorious course features an innovative chocolate-integrated dish, a paired chocolate morsel, AND a sommelier-selected wine pairing!

Award-Winning Chocolatier Tracey Racen has lived in Defiance with her husband Ken, a St. Louis nativesince 2016. Tracey, originally from California, is the founder of two chocolate companies Downey’s Chocolates and Xan Confections where she was in charge of product development. Tracey’s style is a combination of Belgian and French technique. She left chocolate manufacturing in 2011 and is now consulting. In October of 2020 Tracey started collaborating with Chandler Hill Vineyards to create micro-batch chocolates and confections. Her part-time venture Bread Chocolate Honey provides her favorites to a select clientele.
An industry leader, Tracey is a founding member of the Fine Chocolate Industry Association.
